Ricciarelle
Le Ricciarelle is a pasta produced with durum wheat semolina and water. They are originally from Campania.
They are bronze drawn, to make the surface of the pasta porous and dried slowly at low temperatures in order to give the product such roughness and consistency that it can blend with any sauce or seasoning, both sea and land.

Tips for perfect cooking
Use 6 liters of water for 500g.
Add salt and when the water boils, add the pasta.
Stir occasionally.
When cooked, drain and season to taste.
Cooking time: 10-12 min.
